There is some back stitching to add definition but it is not 100% necessary for the finished project to look good. Black thread is necessary for this addition. 

Opinions:
I find the number of threads you use to be a matter of preference, I use 3 threads on mine so I don't see white behind my x's. Colors are a suggestion, not a rule. I select my colors based on how they look in real life. Pattern software may skew colors a bit. I am a fan of substituting colors according to preference or necessity.
